Place the dried chickpeas in a large bowl and cover them with water. Let them soak for at least 8 hours or overnight. Drain and rinse the soaked chickpeas before using. In a large pot, heat the olive oil over medium heat.

Once the chickpeas are cooked to your desired tenderness, taste and adjust the seasoning if needed, adding more salt or lemon juice according to your preference.
Remove the pot from heat and transfer the chickpeas to a serving dish.
Garnish with fresh chopped parsley for a pop of color and extra freshness.
