Ingredients for caramelized onions
Directions
Begin by cleaning the carrots and either grating them or cutting them into crescent shapes. Set them aside.
Next, take the two onions and cut them into quarters. Set them aside as well.
After cutting the vegetables, place a pot over high heat and add 3 tablespoons of oil. Allow the oil to heat for about 3 minutes. Then, add the carrots and onions to the pot. Fry them for 3 to 4 minutes, stirring occasionally, until they begin to soften and develop a golden color.
Once the carrots and onions are nicely fried and coated in the oil, add the fava beans to the pot. Allow them to fry for about 4 minutes, stirring occasionally to ensure even cooking. The fava beans should start to develop a slightly crispy texture on the outside.
When the fava beans start to change color and the vegetables are well-coated, pour in enough water to cover the mixture. Bring the water to a boil, then reduce the heat to low and let it simmer for about 40 minutes. The fava beans should become tender and the flavors will meld together beautifully.
Occasionally, stir the mixture well to ensure that the fava beans absorb all the flavors from the onions and carrots. This will help create a harmonious blend of flavors throughout the dish.
Once the mixture has boiled and the fava beans are tender, use a hand blender to blend the ingredients until a smooth and velvety texture is achieved.
Allow the blended fava mixture to cool down slightly. Then, season it with salt and pepper to taste. Stir well to evenly distribute the seasoning throughout the dish.
Directions for caramelized onions

Add the onion to a non-stick pan along with 2 cups of water, 4 tablespoons of brown sugar, the juice of 2 lemons, the juice of half a grapefruit, and 1/2 cup of traditional molasses.
Allow the onions to caramelize over low heat, stirring occasionally, until the syrup begins to thicken and set.
Remove the pan from the heat and allow the caramelized onions to cool to room temperature.
Recipe Note
As the fava mixture cools, its consistency will gradually thicken. Initially, after boiling, the texture may appear more fluid.
Start by caramelizing the onions because they take longer to cook than the fava beans. This way, both the onions and fava beans will be ready at about the same time.
Once both preparations are ready, take a small plate and add the desired amount of fava beans. Next, layer the caramelized onions on top of the fava beans, and sprinkle the crushed pistachios over them.
