Ingredients

2 cups Arosis chickpeas

2 large eggplants

1 medium onion

2 medium tomatoes

2 tbsp Kyknos tomato paste

4 cups water

3 tbsp Iliada extra virgin olive oil

2 tsp Kalas sea salt

1 tsp black pepper

2 tbsp sweet paprika

1 tsp thyme
Directions
Soak the chickpeas overnight, ideally for 8 hours, to prepare them for cooking the next morning.
To start, drain the soaked chickpeas and remove a few of their skins. Place the chickpeas in a pot with the reserved soaking water and bring to a boil. Simmer for 1 hour.
While the chickpeas are boiling, cube the eggplants and slice the onions into rings.
Once the chickpeas are boiled, transfer them to a pan along with the eggplants and onions.
Add sweet paprika, salt, pepper, thyme, tomato paste, and grated fresh tomato.
Mix everything well and bake in the oven for 40 minutes.

This dish pairs wonderfully with Trata smoked herring in soybean oil.
