1 Cup Fantis Sour Trahanas

3 Cups Water

1 tsp black pepper

1 tsp Kalas sea salt

1 tbsp butter

1 onion

1 tbsp Horio extra virgin olive oil

5 pieces Porcini mushrooms

5 pieces of Shiitake mushrooms

1 tsp sweet paprika

1 chili pepper

Directions
Begin by soaking the dried mushrooms in a bowl of water for 15 minutes to ensure they are fully rehydrated.
Heat a pan over medium heat and add the onions. Sauté them until they start to soften.
Then, add the chili pepper, sweet paprika, black pepper, salt, and chopped chives. Continue to cook, stirring frequently, until the onions are caramelized and have a nice color.
Now, incorporate the mushrooms along. (keep the water that were soaked in for next step).
Sauté the ingredients for 2 to 3 minutes, then incorporate our sour trahana along with one glass of the reserved water.
Occasionally stir the mixture until it begins to absorb the water, then add the remaining 2 glasses of reserved water.
Finally, incorporate the butter into the mixture and stir until the water evaporates, indicating that your trahana is ready.
